Jamaican Beef Patties

Ingrediants Needed:

  • 3 1/2 cups all-purpose flour
  • 3 tsp ground turmeric
  • 2 tsp granulated sugar
  • 1 1/2 tsp kosher salt
  • 1 cup vegetable shortening
  • 1/2 cup minced or ground unrendered beef suet
  • 1/2 to 3/4 cup ice cold water
  • 1 tbsp vegetable oil
  • 2 small scotch bonnet peppers
  • 1 medium onion,diced
  • 1 pound beef chunk
  • 2 tsp ground allspice
  • 1 1/2 tsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tbsp soy sauce
  • 2 small beef stock cubes
  • Steps to Follow: In order to make the crust you have to whisk the flour in a bowl and then whisk in the turmeric, salt, and sugar. Mix the beef suet and rub it into the dry ingrediants with your fingers until the mixture is even and crumbly. Slowly add in 1/2 cup of ice cold water while stirring the dough, if the dough isn't coming together add more water as necessary. Cover the bowl of dough with cling wrap and refrigerate for at least 1 hour or up to 2 days. While the dough is chilling you can make the filling. Start by heating a large pan over medium and then add vegetable oil. After it is heated fry the scotch bonnet peppers and onions and stir it occasionally until it is softened. Add the beef and then cook until it is brown. Season it with allspice, black pepper, garlic powder,paprika, soy sauce, and beef stock mixture. Transfer the dish and let it cool completely at room temperature. When it is all ready to assemble, heat the oven at 375 degrees. Remove the dough from the refrigerator and roll on a lightly floured surface. Fold the dough in half to form a rectangle, and then fold it again the other way to form a square. Roll it again and repeat the process three times, letting the dough rest as needed. Roll the dough to 1/8 inch thickness and then use a bowl or pastry cutter to cut out 10 rounds. Divide the beef among the rounds, spooning about 1/4 cup onto one side of each round. Fold the other side of each round over the meat until the edges meet. Using a fork, seal the edges, then prick the center of each to allow the steam to escape. Place the patties on 1 or 2 baking sheets, and then bake until the pastry is set to a golden color.

    Ingrediants Needed:

  • 2 cups flour
  • 1 tsp salt
  • 1/2 cup cold water
  • 1 1/4 oz shortening
  • 1 3/4 oz margarine
  • 1 large grated, dry coconut
  • 1 cup brown sugar
  • 1/4 tsp nutmeg
  • 1 tbsp water
  • 1/4 tsp butter
  • Maraschino cherries
  • Steps to Follow: Over low heat, add water and sugar to a heavy bottom pot. Boil it until it turns into syrup, and the add grated coconut and nutmeg. Continue to boil for about 10 minutes and stir occasionally. Add the butter and mix into mixture until all the butter has disappeared. Set aside for it to cool. In order to make the coconut filling heat the oven to 350 degrees. Sift together salt and flour in a large bowl and then cut shortening and butter into mixture till it is incorporated. Add water to the mixture to make a dough and place the dough in plastic wrap and place it in the fridge for 30 minutes. Using a rolling pin on a floured surface, roll the dough out to about 1/4 inch thickness. With an 8-inch glass cut circles out of the dough. Once all the shells are made, place the dough on an ungreased baking sheet and bake for 15 minutes. Take out of the oven and carefully add the coconut filling into the cases. Decorate with half a cherry in the center and bake the treats for another 20 minutes.
