Nova Scotia Lobster Rolls

Ingrediants Needed:

  • 1 cup chopped cooked Lobster
  • 3 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1/4 cup diced celery
  • 1 tbsp chopped parsley
  • Steps to Follow: First start by preparing your lobster filling. Mix the lobster meat, mayonnaise, lemon juice, celery, parsely, and salt and pepper. Set this aside for later use. The next step is to heat a skillet to medium and spread butter on both sides of the hot dog roll. Grill the roll on the skillet until it is a golden brown color.The last step is to put the lobster mixture onto the hot dog roll, and it is ready to eat.

    Nanaimo Bars

    Ingrediants Needed:

  • 1 cup of softened butter
  • 5 tbsp unsweetened cocoa powder
  • 1/4 cup white sugar
  • 1 beaten egg
  • 1 3/4 cup graham cracker crumbs
  • 1 cup flaked coconut
  • 1/2 cup chopped almonds
  • 3 tbsp heavy cream
  • 2 tbsp custard powder
  • 2 cups confectioners sugar
  • 1 ounce squared semisweet baking chocolate
  • 2 tsp butter
  • Steps to Follow: In a double boiler, combine 1/2 cup of softened butter, cocoa powder, and sugar. Stir it occasionally until it is melted and smooth. Then beat the egg and stir until it is thick, for two to three minutes. Remove the mixture from the heat and mix in graham cracker crumbs, coconut, and almonds. Press onto the bottom of an ungreased 8x8-inch pan. For the middle layer, use the remaining 1/2 cup of softened butter, heavy cream, and custard powder until it is light and fluffy. Mix in confectioners sugar until it is smooth. Spread it over the bottom layer in the pan. Put it in the refrigerator for it to set. In the meantime, melt semisweet chocolate and two teaspoons of butter together in the microwave over low heat. Spread the melted chocolate over chilled bars and let the chocolate set before cutting it into squares.
